Slimming World Sweet Potato Mac & Cheese – 3.5 syn

Grate up all the cheese

peel and chop the sweet potatoes into chunks

Add the potatoes to a  pan, cover with boiling water

Add a pinch of salt and bring to the boil

Simmer for 10+ mins until the potatoes are soft

Take out the sweet potato and add to a bowl

Make up the macaroni (as packet describes)

Drain and cool the pasta when cooked

Mash sweet potatoes in the bowl

Add quark to the potato and mix

Add the cooled pasta 

Add 100g of the grated cheese and mix

Pour in the milk to a pan and add the cornflour

Bring to the boil and stir until it thickens.

Add ½ tsp salt, ½ tsp pepper to the milk and mix.

When milk mixture has thickened, add it to sweet potato/pasta mixture and mix all together

Add another pinch of S+P (and chili and paprika here  if you wanted)

Scoop the mixture into oven proof dish

Sprinkle on the remaining cheese to the top of it

Pop in the oven for 30 mins at 180 degrees until the cheese starters to brown

Serve.

You will need:

500g Sweet potatoes
300g Macaroni
2 Tbsp (level) cornflour
500ml skimmed milk
250g Quark
160g Reduced fat cheddar
Salt and Pepper
1 Tsp Chilli or paprika if you want a kick to it.
