Separate the 5 eggs, (yokes in one bowl, whites in the other)
Zest and juice both lemons.
Beat the egg yokes
Add 30g sweetener and flour into a bowl.
Add ½ the lemon juice + all the zest to the bowl
Add in egg yoke and mix
Beat your egg whites until fluffy
Fold in the fluffy egg whites into yout mixture
Once folded in together, put into a baking tray.
Out in a 180 degree oven for 30 minutes
Once golden brown take it out the oven and put on a wire rack to cool.
Mix the remaining lemon juice with 15g sweetener.
Cover the top in the lemon juice/sweetener mixture.
Serve.
