Slimming World Chicken Curry – Syn Free

Season your chopped up chicken with a pinch of salt and pepper.

Spray a warming pan with FryLight

Add onion and brown

Once browned add mushrooms and pepper. 

Add the Garlic and Chili powder and stir.

Cook on a medium heat for 5 mins.

Add the chicken and cook for a few minutes until it starts to brown.

Add your passata and stir it all together.

Add the chicken stock and mix again.

Bring to the botil for a minute then reduce the heat.

Cover with a lid and simmer for 40-45 mins.

Check on it every 5-10 minutes and stir to ensure it doesn’t stick.

After 40-45 mins it’s ready to serve.

You can serve with rice, chips, or have it on its own. 

If you like it with a creamy finish add a spoon of Fat free natural yogurt to the top and swirl in.

You will need:

Low calorie cooking spray
2 tsp of Garlic powder
2 large onions peeled & finely chopped
1 green pepper, deseeded & chopped in chunks
4 skinless chicken breasts, chopped into chunks
100g chopped mushrooms
500g of Passata
225ml chicken stock 2
1 heaped tsp of medium curry spice
Pinch of salt and pepper.
Frylight
*Fat free natural yogurt to add at the end – if you like it creamy!
